What in the world is induction?

Induction uses magnetic energy and it is redefining the way we cook today.  Induction power generators create a magnetic field which reacts with the ferrous metal of cookware, transforming the cooking vessel into the heat source.  In short, the pan becomes the heating element so all the power goes directly into your cooking.  No element cycling on and off; no gas emissions into the air; no wasted energy. 


 

     
   
     
 

In fact, induction cooking offers a 90%+ efficiency rating.  Pans are ready to go in virtually seconds.  And the energy transfer stops just as quickly when cookware is removed, leaving the cooktop cool to the touch almost immediately.  Just imagine: no more element burning on food! 

Not all cookware is compatible with induction so before going out and making that new cookware purchase, check to make sure it’s induction friendly.  As a rule of thumb, stainless steel, enamel and cast iron are usually compatible.  Copper glass and aluminum are not. 

 

When in doubt, pull out a magnet.  If it sticks to the bottom of your pan, you’re good to go.
